Bain Marie 800 mm 80703.11

Bain-marie is used to keep cooked products at service temperature with hot water steam.

Bain Marie

Bain-marie is used to keep cooked products at service temperature with hot water steam. Water is added to the pool manually. Thanks to the Drain valve on the front panel, it is possible to drain the water quickly. Electric models have a thermostat that controls temperature between 30-90 °C. Additionally, a safety thermostat is used to prevent overheating. In electric models, a silicone sheath-covered bonding resistor with a 140 °C safety thermostat is used. In gas models, the stainless steel burner is placed under the water pool. High efficiency burner provides rapid heating of water. Depending on the device size, the bain-marie pool takes 1 or 2 GN 1/1 tubs. For 40' products, 1 tub is used. For 80' products, 2 tubs are used. Separation bars are used to separate gastronomy tubs.
